At Dunbar Community Bakery we like our pain levain holey. The process for creating such a texture is a closely guarded secret, but because it is a natural process it can vary quite a bit. The number of holes and the size that is.

Another well-kept secret is that we’ve been working with Dunbar Parish Church and Grace Church who have been collecting at the end of each day any left over bread. They organise a local food bank and make sure the bread finds an appreciative home. This means that the needy in Dunbar and district are getting a nutritious loaf and ensures that little of our surplus bread goes to waste.
